This way of making salmon was shared with our family by my very special French boys, Marc and Coco, who spent three weeks with our family in the summer of 2007. They wanted to make a meal for us one night to show their gratitude and this is what they made. Very impressive I thought. My family still enjoys it and I hope yours does too!
Ingredients
Salmon
Olive oil
Salt and Pepper or seasoning of choice
White Onion
Garlic
Tomato
Basil
Lemon Juice
Basmiti Rice
Directions
Put foil down in oven pan then lay salmon on it skin side down.
Drizzle salmon with a little olive oil then season as you wish (salt/pepper or whatever you like)
Layer on top of salmon with sliced white onion, garlic, and sliced tomato. If you have some basil, add that to the top of the vegetables. Drizzle once again a small amount of lemon juice.
Pour very small amount water at bottom of foil and close up foil tight so fish can steam cook in oven.
Cook in oven on 350-400 degrees for 20-30 minutes.
On stove make Basmati rice which cooks in about 15 minutes.
Make marinara sauce on stove using a jar of ready-made sauce or make your own using tomatoes, onion, garlic, basil, oregano, and seasoning.
Presentation idea: add rice to plate then drizzle marinara sauce over. Next layer fish on top of rice mixture with more marinara sauce. If you like, top with Parmesan cheese and/or basil.
